Thai Chicken Pasta

This is a really good recipe! You all should definitely try it. You probably won't have most of the ingredients just sitting in your pantry, but it is worth a trip to the grocery store. Becky and Michelle have both made it and now I can agree with them that it is very tastey. Aaron said it tasted just like the Thai Chicken Pasta he gets at Kona Grill. Here it is:

CHICKEN THAI PASTA W/ SPICY PEANUT SAUCE
12 oz linguine 4 tbsp sesame seed oil (Divided)
1/2 cup green onions chopped 1 cup finely shredded carrots
2 cups frozen stir fry veggies (or other fresh veggies)
3 tbsp minced fresh garlic
1/2 tbsp ground ginger 1 tbsp fresh ginger minced
1/4 cup honey 1/4 cup soy sauce
1/4 cup creamy peanut butter 3 tbsp rice vinegar
1/2 tbsp chili garlic sauce (or more for added spice!)
2-4 breasts of chicken, cooked and chopped

Cook pasta according to directions on package. Drain & return to pot. Add 2 tbsp of sesame oil, toss & coat. Set aside. Heat remaining 2 tbsp sesame oil in heavy pot over med-high heat. Add green onions, carrots, stir-fry veggies, garlic & ginger. Sauté until veggies soften (about 4 min). Add honey, peanut butter, soy sauce, vinegar, and chili garlic sauce & mix well. Add cooked Chicken and heat several minutes. Pour sauce over pasta & toss well, transfer to platter, serve warm.
